Featured Recipe by Fine Linen Paper: Fresh Herb Red-Skinned Potato Salad

Lighttrack Nutrition is proud to present a deliciously fresh recipe from one of my favorite recipe artists, my very own sister Kelly Boyer of Fine Linen Paper. She lives in a gorgeous farmhouse in Tennessee and creates healthy recipes (and some mouth-watering Southern-style comfort foods) from foods picked fresh from her backyard garden and local farmer's market. Enjoy this summertime cookout favorite at your next outdoor event.

A creamy red-skinned potato salad packed with fresh herbs and tossed in a light and slightly tangy dressing. Perfect accompaniment to any summer entree.



  • 3 pounds of red-skinned potatoes, quartered

  • 3 Tablespoons of rice vinegar

  • 3/4 cup of high quality mayonnaise

  • 3 green onions, thinly sliced

  • 1 celery stalk, cut into rather thin quarter rounds

  • 1/4 cup roughly chopped fresh parsley

  • 1/4 cup roughly chopped fresh basil

  • 2 Tablespoons chopped fresh dill

  • 1 1/2 teaspoons finely grated lemon peel

  • salt and pepper to taste


1)  Wash, cut and boil potatoes until they are fork tender. 

2)  Drain and rinse with cold water. Transfer to a bowl and allow to cool.

3). Chopped fresh herbs.

4). Grate lemon peel.

5). Combine herbs and lemon peel with mayonnaise and rice vinegar.

6). Gently toss the mayonnaise dressing mixture into the cooled potatoes until each potato is coated.

7). Add salt and pepper to taste

8). Refrigerate until ready to enjoy!
